Apple Cobbler

This apple cobbler recipe bakes fresh apples beneath a biscuit topping until the fruit is tender and the top is golden brown. A 9x13-inch baking dish gives the apples room to bubble around the soft, lightly crisp biscuits.

Ingredients

For the apple filling
  • 1 tbsp unsalted butter for greasing the baking dish
  • 3 lb apples about 8 medium, peeled, cored, and cut into 1/4-inch slices
  • 0.5 cup granulated sugar
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.25 tsp salt
For the biscuit topping
  • 1.5 cup all-purpose flour
  • 0.33 cup granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 6 tbsp unsalted butter cold, cut into small pieces
  • 0.67 cup milk

Equipment

  • 1 9x13-inch baking dish

Method

Prepare the apple filling
  1. Heat the oven to 375°F.
  2. Use the tablespoon of butter to grease a 9x13-inch baking dish.
  3. In a large bowl, toss the apples with the sugar, lemon juice, cornstarch, cinnamon, nutmeg, and salt.
  4. Spread the apple mixture in the prepared dish.
Make the biscuit topping
  1. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Cut in the cold butter with a pastry blender or your fingertips until the mixture has pea-size pieces.
  3. Stir in the milk just until a shaggy dough forms.
Assemble and bake
  1. Drop spoonfuls of dough over the apples, leaving small gaps between them.
  2. Bake for 45 to 55 minutes, until the topping is golden brown and a knife slides easily into the apples; loosely cover the topping with foil if it browns before the apples are tender.
  3. Let the cobbler rest for 15 minutes before serving.

Notes

Cut the apples into even slices so they soften at the same rate. Refrigerate leftovers for up to 4 days; freezing is suitable. For a dairy-free version, use dairy-free butter and milk.
