Baked Potatoes in Foil

Baked potatoes in foil are oven-baked until the centers turn tender and a knife slides in easily. Olive oil, kosher salt, and black pepper season the fluffy russet potatoes simply while the foil keeps them soft.

Ingredients

  • 4 russet potatoes large, about 8 ounces each
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 0.25 tsp black pepper

Method

  1. Preheat the oven to 400°F.
  2. Scrub the potatoes and dry them thoroughly.
  3. Prick each potato 6 to 8 times with a fork.
  4. Rub the potatoes with the olive oil.
  5. Season the potatoes evenly with the kosher salt and black pepper.
  6. Wrap each potato tightly in aluminum foil and place them directly on the oven rack.
  7. Bake for 60 to 75 minutes, until a knife slides easily into the center of each potato.
  8. Carefully unwrap and serve the potatoes while hot.

Notes

Dry the potatoes thoroughly before wrapping so the seasoning sticks well. Refrigerate leftovers for 3 to 4 days; freezing is not recommended for the best texture. The recipe is naturally gluten-free.
