Ingredients

  • 2 tbsp olive oil
  • 1 yellow onion medium, diced
  • 2 celery ribs, diced
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 tsp dried thyme
  • 3 cloves garlic minced
  • 6 cups low-sodium chicken broth
  • 1.5 lb chicken breasts boneless, skinless
  • 1 cauliflower large head, cut into bite-size florets
  • 1 cup heavy cream
  • 2 tbsp parsley chopped fresh

Equipment

  • 1 6-quart Dutch oven

Method

  1. Heat the olive oil in a 6-quart Dutch oven over medium heat.
  2. Add the onion, celery, salt, pepper, and thyme and cook for 5-7 minutes, stirring occasionally, until the vegetables soften.
  3. Stir in the garlic and cook for 30 seconds.
  4. Pour in the chicken broth and add the chicken breasts, then bring to a gentle simmer over medium-high heat.
  5. Reduce the heat to maintain a gentle simmer and cook uncovered for 15-20 minutes, until the thickest part of each chicken breast reaches 165°F.
  6. Transfer the chicken to a plate.
  7. Add the cauliflower to the pot and simmer for 10-15 minutes, until fork-tender.
  8. Rest the chicken for 5 minutes.
  9. Shred the chicken into bite-size pieces.
  10. Return the chicken to the pot.
  11. Stir in the heavy cream and parsley.
  12. Warm over low heat for 2-3 minutes without boiling, until the soup is hot throughout.

Notes

For the most tender chicken, remove it as soon as the thickest part reaches 165°F. Refrigerate leftovers for 3-4 days; freeze for up to 2 months, preferably before adding the cream, as dairy may separate when thawed. For a dairy-free swap, use unsweetened coconut cream in place of heavy cream.
