Ingredients

For the cheese ball
  • 1 block (8 oz) cream cheese softened
  • 1 packet (1 oz) dry ranch seasoning mix
  • 2 cups sharp cheddar cheese shredded
  • 2 green onions thinly sliced
For the coating
  • 1 cup pecans finely chopped
  • 2 tablespoons fresh parsley finely chopped

Method

Make the cheese ball
  1. In a medium bowl, mix the cream cheese and ranch seasoning until smooth.
  2. Stir in the cheddar and green onions until evenly combined.
  3. Cover and refrigerate the mixture for 30 minutes, until firm enough to shape.
Coat and chill
  1. Stir the pecans and parsley together on a plate.
  2. Shape the chilled cheese mixture into a ball and roll it in the pecan mixture to coat.
  3. Cover and refrigerate for at least 1 hour before serving.

Notes

For easier shaping, make sure the mixture is firm enough to handle after chilling. Refrigerate leftovers for 3–4 days; freezing is not recommended. For a nut-free coating, use extra shredded cheddar instead of pecans.
