  • 3 cloves garlic minced
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans drained and rinsed
  • 1 can (15.25 oz) corn drained
  • 1.5 lb chicken breasts boneless, skinless
  • 1 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  3. Add the broth, tomatoes, black beans, corn, chicken breasts, salt, and pepper, and bring to a boil over medium-high heat.
  4. Reduce the heat to low, cover, and simmer for 20 to 25 minutes, until the chicken reaches 165°F in the thickest part.
  5. Transfer the chicken to a cutting board and shred it with two forks.
  6. Return the chicken to the soup and simmer uncovered for 2 to 3 minutes.
  7. Remove the pot from the heat and let the soup rest for 5 minutes before serving.
