Ingredients

For the slow cooker
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 can (10 oz) diced tomatoes with green chiles undrained
  • 1 cup chicken broth
  • 1 yellow onion small, diced
  • 1 tsp garlic powder
  • 0.5 tsp black pepper
  • 2 lb chicken breasts boneless, skinless, thawed
For the pasta and finish
  • 4 qt water
  • 1 tbsp kosher salt
  • 12 oz dried spaghetti broken in half
  • 1 block (8 oz) sharp cheddar cheese shredded

Equipment

  • 1 6-quart slow cooker
  • 1 8-quart pot

Method

Cook the chicken
  1. In a 6-quart slow cooker, stir together the cream of chicken soup, tomatoes with their juices, chicken broth, onion, garlic powder, and black pepper.
  2. Add the thawed chicken breasts and turn to coat.
  3. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the thickest part of each breast reaches 165°F.
  4. Transfer the chicken to a cutting board.
  5. Shred the chicken with two forks.
  6. Return the chicken to the slow cooker and stir it into the sauce.
Cook the pasta and finish
  1. Bring the water and kosher salt to a boil in an 8-quart pot.
  2. Add the spaghetti and cook for 8–10 minutes or until al dente.
  3. Drain the spaghetti well.
  4. Stir the shredded cheddar and drained spaghetti into the slow cooker.
  5. Cover and cook on HIGH for 10–15 minutes, stirring once, until the cheese is melted and the spaghetti is hot.

Notes

For the best texture, shred the chicken while it is warm before stirring it back into the sauce. Refrigerate leftovers for 3–4 days; freeze leftovers yes, though the sauce may separate slightly when reheated. Use gluten-free spaghetti for a gluten-free variation.
