Ingredients

For the coconut centers
  • 1 cup powdered sugar
  • 0.5 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 3 cups sweetened shredded coconut
For the chocolate coating
  • 12 oz bittersweet chocolate about 60% cacao, finely chopped
  • 1 tbsp coconut oil

Equipment

  • 1 rimmed baking sheet

Method

Make the coconut centers
  1. Line a rimmed baking sheet with parchment paper.
  2. Stir the powdered sugar, sweetened condensed milk, vanilla, and salt together in a medium bowl until smooth.
  3. Fold in the coconut until evenly moistened and the mixture holds together when pressed.
  4. Shape the mixture into 18 bars about 2 inches long and place them on the prepared baking sheet.
  5. Refrigerate for 30 to 45 minutes, until firm.
Dip and set
  1. Combine the chocolate and coconut oil in a heatproof bowl and microwave at 50% power in 20-second bursts, stirring after each, for 1 to 2 minutes total, until smooth.
  2. Dip each chilled coconut bar in the chocolate, let the excess drip back into the bowl, and return it to the baking sheet.
  3. Refrigerate for 15 to 20 minutes, until the chocolate is set.

Notes

Chill the coconut bars until firm before dipping to help them hold their shape. Store in an airtight container in the refrigerator for up to 1 week; freeze for up to 2 months. For a dairy-free version, use dairy-free sweetened condensed milk and dairy-free bittersweet chocolate.
