Easy Pecan Pralines

Easy pecan pralines are made on the stovetop with pecans folded into a cooked sugar mixture, then dropped onto parchment to set. They cool into firm candies with a rich, nutty bite and a smooth, non-glossy finish.

Ingredients

  • 2 cup granulated sugar
  • 1 cup light brown sugar packed
  • 0.75 cup evaporated milk
  • 4 tbsp unsalted butter
  • 0.25 tsp fine salt
  • 2 cup pecan halves
  • 1 tsp vanilla extract

Equipment

  • 1 18x13-inch baking sheet

Method

  1. Line a large 18x13-inch baking sheet with parchment paper.
  2. In a heavy 4-quart saucepan, combine the granulated sugar, brown sugar, evaporated milk, butter, and salt; cook over medium heat, stirring, until the sugars dissolve and the butter melts, about 3 minutes.
  3. Bring the mixture to a boil, then cook without stirring until a candy thermometer reads 236°F, about 8 to 12 minutes.
  4. Remove the pan from the heat.
  5. Stir in the pecans and vanilla.
  6. Beat vigorously for 2 to 4 minutes, until the mixture thickens and loses its glossy shine.
  7. Quickly drop heaping tablespoonfuls onto the prepared baking sheet, spacing them about 1 inch apart.
  8. Let cool until firm, about 20 to 30 minutes.

Notes

For the best texture, beat until the mixture thickens and loses its glossy shine, then drop the pralines quickly before it sets. Store airtight in the refrigerator for up to 2 weeks or freeze for up to 2 months. For a dairy-free version, try plant-based butter and evaporated coconut milk; the texture may vary.
