Ingredients

  • 4 potatoes large, russet
  • 4 bacon slices
  • 1 cup cottage cheese low-fat
  • 0.5 cup Greek yogurt plain
  • 2 tbsp butter softened
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 1 cup cheddar cheese shredded, divided
  • 2 scallions thinly sliced

Equipment

  • 1 rimmed baking sheet
  • 1 12-inch skillet

Method

  1. Heat the oven to 400°F.
  2. Scrub and dry the potatoes, prick each several times with a fork, and place them on a rimmed baking sheet.
  3. Bake for 55–70 minutes, until a knife slides easily into the centers.
  4. Cook the bacon in a 12-inch skillet over medium heat for 8–12 minutes, turning as needed, until crisp.
  5. Drain the bacon on a paper towel and crumble it.
  6. Let the potatoes cool until easy to handle.
  7. Halve the potatoes lengthwise and scoop the flesh into a large bowl, leaving about 1/4 inch of potato inside each skin.
  8. Return the potato skins to the baking sheet.
  9. Add the cottage cheese, Greek yogurt, butter, salt, and pepper to the potato flesh and mash until creamy.
  10. Fold in 1/2 cup cheddar and the crumbled bacon.
  11. Spoon the filling into the potato skins and top with the remaining 1/2 cup cheddar.
  12. Bake at 400°F for 15–20 minutes, until hot throughout and the cheese is melted and lightly browned.
  13. Let the potatoes rest for 5 minutes.
  14. Sprinkle with the scallions and serve.

Notes

For the smoothest filling, mash the potato mixture thoroughly before folding in the cheddar and bacon. Refrigerate leftovers for 3–4 days; freezing is possible, though the filling may soften slightly when thawed. For a lighter option, swap in turkey bacon.
