Ingredients

For the casserole
  • 1 nonstick cooking spray for coating
  • 3 lb sweet potatoes peeled and cut into 1/2-inch-thick slices
  • 3 apples medium, firm (about 1 1/2 pounds), such as Granny Smith or Honeycrisp, cored and cut into 1/2-inch-thick wedges
For the honey glaze
  • 6 tbsp unsalted butter
  • 0.33 cup honey
  • 0.25 cup light brown sugar packed
  • 1 tsp ground cinnamon
  • 0.25 tsp kosher salt

Equipment

  • 1 9x13-inch baking dish

Method

Prepare the casserole
  1. Heat the oven to 375°F.
  2. Coat a 9x13-inch baking dish with nonstick cooking spray.
  3. Put the sweet potatoes in a large pot and cover with cold water by 1 inch.
  4. Bring the sweet potatoes to a boil over medium-high heat.
  5. Cook for 6 to 8 minutes, until a knife meets slight resistance, then drain well.
Make the honey glaze
  1. Melt the butter in a small saucepan over medium-low heat.
  2. Stir in the honey, brown sugar, cinnamon, and salt until smooth, about 2 minutes.
Assemble and bake
  1. Arrange the sweet potatoes and apples in alternating layers in the prepared dish.
  2. Pour the honey glaze evenly over them.
  3. Cover tightly with foil and bake for 20 minutes.
  4. Uncover and bake for 15 to 20 minutes, until the sweet potatoes are tender and the glaze is bubbling.
  5. Let the casserole rest for 10 minutes before serving.

Notes

Drain the sweet potatoes well so the glaze coats the layers instead of becoming watery. Refrigerate leftovers for up to 4 days; freeze for up to 2 months and thaw in the refrigerator before reheating. For a dairy-free swap, use plant-based butter.
