Ingredients

  • 1 cup unsalted butter divided; use 1 cup for the sugar mixture
  • 1 tbsp unsalted butter divided; use to butter the parchment
  • 4.5 cups granulated sugar
  • 1 can (12 oz) evaporated milk
  • 12 oz semisweet chocolate chips
  • 3 bars (4 oz) German sweet chocolate chopped
  • 2 jars (7 oz) marshmallow creme
  • 1 tsp vanilla extract
  • 2 cups walnuts chopped

Equipment

  • 1 9x13-inch baking pan
  • 1 5-quart heavy-bottomed saucepan

Method

  1. Line a 9x13-inch baking pan with parchment paper, leaving overhang on two sides, and butter the parchment with 1 tablespoon of the butter.
  2. Combine the sugar, evaporated milk, and remaining 1 cup butter in a 5-quart heavy-bottomed saucepan. Cook over medium heat, stirring constantly, until the butter melts and the sugar dissolves, about 3 to 5 minutes.
  3. Bring the mixture to a full boil and continue cooking and stirring until it reaches 234–238°F on a candy thermometer, about 5 to 8 minutes.
  4. Remove the pan from the heat and stir in the chocolate chips, German sweet chocolate, and marshmallow creme until smooth.
  5. Stir in the vanilla and walnuts.
  6. Spread the fudge evenly in the prepared pan.
  7. Cool at room temperature for 3 to 4 hours, until firm.
  8. Lift the fudge out of the pan and cut it into 48 pieces.

Notes

For the smoothest texture, use a candy thermometer and cook the mixture to the stated temperature. Store covered in the refrigerator for up to 2 weeks; freeze for up to 3 months. For a nut-free option, omit the walnuts.
