Method
Prepare the potato
- Prick the potato all over with a fork.
- Microwave the potato on high for 5 to 7 minutes, turning halfway through, until a knife slides easily into the center; cool completely.
- Peel the potato.
- Mash the potato smooth and measure 1/2 cup; reserve or discard any extra.
Make the dough
- In a medium bowl, stir together the mashed potato, vanilla, and salt.
- Stir in 4 cups confectioners' sugar, 1 cup at a time.
- Add more confectioners' sugar a little at a time, up to 5 cups total, until the dough is soft and no longer sticky.
- Cover and refrigerate the dough for 30 minutes, until firm enough to roll.
Fill and shape
- Roll the dough between two sheets of parchment paper into a 10-by-12-inch rectangle about 1/4 inch thick.
- Spread the peanut butter evenly over the dough, leaving a 1/2-inch border along one short edge.
- Starting at the opposite short edge, roll the dough tightly into a log.
- Wrap the log in parchment and refrigerate for 1 hour, until firm.
- Unwrap the log and cut it into 1/2-inch slices.
Notes
For smooth candy, mash the potato thoroughly and add the confectioners' sugar gradually until the dough is no longer sticky. Store covered in the refrigerator for up to 5 days; freeze yes, for up to 2 months. For a peanut-free option, creamy sunflower seed butter can replace the peanut butter.
