Ingredients

For the sweet potatoes
  • 2 lb sweet potatoes scrubbed and cut into 1/2-inch-thick rounds
  • 2 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
For the topping
  • 2 tbsp honey
  • 3 oz feta cheese crumbled

Equipment

  • 1 large rimmed baking sheet

Method

Roast the sweet potatoes
  1. Heat the oven to 425°F.
  2. Line a large rimmed baking sheet with parchment paper.
  3. Toss the sweet potato rounds with the olive oil, kosher salt, and black pepper.
  4. Arrange the rounds in a single layer on the baking sheet.
  5. Roast for 15 minutes.
  6. Flip the rounds.
  7. Roast for 10 to 15 minutes more, until tender and browned on the edges.
Finish with honey and feta
  1. Transfer the rounds to a serving platter.
  2. Drizzle with honey.
  3. Sprinkle with feta.

Notes

Arrange the rounds in a single layer so their edges brown evenly. Refrigerate leftovers for up to 3 days; freezing is not recommended. For a dairy-free version, use dairy-free feta.
