Method
Make the filling
- In a medium bowl, mix the bulk pork sausage, plain dry breadcrumbs, dried rubbed sage, and black pepper until evenly combined.
Assemble and bake
- Heat the oven to 400°F.
- Line a 13x18-inch rimmed baking sheet with parchment paper.
- Working with one sheet at a time, unfold the frozen puff pastry on a piece of parchment.
- Cut each pastry sheet lengthwise into 3 equal strips.
- Divide the filling into 6 equal portions.
- Shape each portion into a rope as long as a pastry strip.
- Place one rope down the center of each strip.
- Whisk the large egg with the water to make egg wash.
- Brush one long edge of each strip with egg wash.
- Fold the opposite edge over the filling and press the edges together to seal.
- Cut each filled strip crosswise into 3 pieces.
- Arrange the pieces seam-side down on the baking sheet, leaving space between pieces.
- Brush the tops with the remaining egg wash.
- Bake for 25–30 minutes, until the pastry is puffed and deep golden and the sausage reaches 160°F in the center.
- Rest the sausage rolls on the baking sheet for 5 minutes before serving.
Notes
Keep the puff pastry cold while assembling for the flakiest layers. Refrigerate leftovers for up to 3 days; freeze baked sausage rolls for up to 2 months. For a gluten-free option, use gluten-free puff pastry and breadcrumbs.
