Scottish Beef Stew

Scottish beef stew simmers beef chuck in a savory broth until fork-tender, with carrots, rutabaga, and Yukon Gold potatoes. Browning the beef first builds a rich base for this hearty one-pot dinner.

Ingredients

  • 2.5 lb beef chuck cut into 1 1/2-inch cubes
  • 0.33 cup all-purpose flour
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 3 tbsp vegetable oil
  • 1 yellow onion large, chopped
  • 4 cup low-sodium beef broth
  • 1 tbsp Worcestershire sauce
  • 2 bay leaves
  • 1 tsp dried thyme
  • 3 carrots medium, cut into 1-inch pieces
  • 1 rutabaga medium, peeled and cut into 1-inch pieces
  • 1 lb Yukon Gold potatoes scrubbed and cut into 1 1/2-inch pieces

Equipment

  • 1 6-quart Dutch oven

Method

  1. In a large bowl, toss the beef with the flour, salt, and pepper until evenly coated.
  2. Heat the oil in a 6-quart Dutch oven over medium-high heat.
  3. Brown the beef in batches, turning to brown all sides, about 8 minutes per batch.
  4. Transfer the browned beef to a plate.
  5. Add the onion to the pot and cook over medium heat, stirring often, until softened, about 5 minutes.
  6. Stir in the broth, Worcestershire sauce, bay leaves, and thyme, scraping up the browned bits.
  7. Return the beef and any juices to the pot.
  8. Bring to a boil over medium-high heat.
  9. Reduce the heat to low, cover, and simmer gently for 1 1/2 to 2 hours, until the beef is beginning to turn tender.
  10. Stir in the carrots, rutabaga, and potatoes.
  11. Cover and simmer gently for 35 to 45 minutes, until the vegetables are tender and the beef is fork-tender.
  12. Remove the bay leaves.
  13. Let the stew rest off the heat for 5 minutes before serving.

Notes

For the best browning, brown the beef in batches without crowding the pot. Refrigerate leftovers for 3–4 days or freeze them; for a gluten-free option, use gluten-free all-purpose flour.
