Ingredients

For the soup
  • 1 tbsp olive oil
  • 1 yellow onion medium, diced
  • 1 lb ground beef 85% lean
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 2 tsp Italian seasoning
  • 0.25 tsp red pepper flakes
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 can (28 oz) crushed tomatoes
  • 6 cups beef broth
  • 1 cup water
  • 8 oz lasagna noodles broken into roughly 2-inch pieces
  • 5 oz baby spinach
For the ricotta topping
  • 1 cup whole-milk ricotta
  • 0.25 cup Parmesan cheese grated
  • 2 tbsp fresh parsley chopped

Equipment

  • 1 6-quart Dutch oven

Method

Make the soup
  1. Heat the olive oil in a 6-quart Dutch oven over medium heat.
  2. Add the onion and cook for 4 to 5 minutes, stirring occasionally, until softened.
  3. Add the ground beef and cook for 6 to 8 minutes, breaking it up with a spoon, until browned and it reaches 160°F.
  4. Stir in the garlic, tomato paste, Italian seasoning, red pepper flakes, salt, and black pepper; cook for 1 minute, stirring.
  5. Stir in the crushed tomatoes, beef broth, and water; bring to a boil, then reduce the heat and simmer for 10 minutes.
  6. Stir in the lasagna noodles and simmer for 10 to 12 minutes, stirring often, until tender.
  7. Stir in the spinach and cook for 1 to 2 minutes until wilted.
Make the ricotta topping and serve
  1. Stir together the ricotta, Parmesan, and parsley in a small bowl.
  2. Ladle the soup into bowls and top each serving with a spoonful of the ricotta mixture.

Notes

For best texture, cook the noodles until just tender and store leftovers refrigerated for up to 3 days; the noodles will continue to absorb broth. Freeze the soup without the noodles and add freshly cooked noodles when serving. For a gluten-free option, use gluten-free lasagna noodles.
