Make the strawberry puree
- Combine the strawberries and sugar in a 3-quart saucepan.
- Cook over medium-low heat for 8 to 10 minutes, stirring occasionally, until the berries are very soft and juicy.
- Press the berries and their juices through a fine-mesh strainer into a bowl, using the back of a spoon to extract the puree.
- Discard the seeds and pulp.
Make the hot chocolate
- Rinse and dry the saucepan.
- Add the milk and salt to the saucepan.
- Warm over medium-low heat for 5 to 7 minutes, stirring occasionally, until steaming but not boiling.
- Remove the saucepan from the heat and add the white chocolate.
- Let stand for 2 minutes.
- Whisk until smooth.
- Stir in the strawberry puree and vanilla.
- Return the saucepan to low heat.
- Warm for 2 to 3 minutes, stirring, until hot.
- Divide among four mugs and serve.
Notes
For the smoothest drink, press the berries thoroughly through the fine-mesh strainer. Refrigerate leftovers for up to 3 days; freezing is not recommended. For a dairy-free variation, use unsweetened plant milk and dairy-free white chocolate.
