Ingredients

  • 1 tbsp unsalted butter softened
  • 1 lb breakfast sausage
  • 8 eggs large
  • 1.5 cup whole milk
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 2 cup sharp cheddar cheese shredded
  • 1 bag (32 oz) tater tots frozen

Equipment

  • 1 9x13-inch baking dish
  • 1 large skillet

Method

  1. Heat the oven to 375°F.
  2. Grease a 9x13-inch baking dish with the butter.
  3. Cook the sausage in a large skillet over medium heat, breaking it into small pieces, for 8 to 10 minutes, until browned and cooked to 160°F.
  4. Drain off excess grease from the sausage.
  5. Whisk the eggs, milk, salt, and pepper in a large bowl until combined.
  6. Spread the cooked sausage in the prepared dish.
  7. Sprinkle the cheddar over the sausage.
  8. Pour the egg mixture evenly over the top.
  9. Arrange the frozen tater tots in a single layer over everything.
  10. Bake uncovered for 55 to 65 minutes, until the tater tots are deeply golden and the center of the casserole reaches 160°F.
  11. Rest the casserole for 10 minutes before serving.

Notes

For the best texture, arrange the frozen tater tots in a single layer. Refrigerate leftovers for 3 to 4 days; this casserole can be frozen. For a dairy-free swap, use dairy-free butter, unsweetened dairy-free milk, and dairy-free cheddar.
