Ingredients

  • 2 cups crisp rice cereal
  • 0.5 cup shredded coconut unsweetened
  • 0.5 cup dried cranberries
  • 0.33 cup pistachios shelled, roughly chopped
  • 12 oz white chocolate chips
  • 1 tbsp refined coconut oil

Equipment

  • 1 8-inch square baking pan

Method

  1. Line an 8-inch square baking pan with parchment paper, leaving overhang on two sides.
  2. Combine the crisp rice cereal, unsweetened shredded coconut, dried cranberries, and shelled pistachios in a large bowl.
  3. Put the white chocolate chips and refined coconut oil in a heatproof bowl set over a saucepan of barely simmering water, making sure the bowl does not touch the water.
  4. Stir until smooth.
  5. Remove the melted chocolate mixture from the heat.
  6. Pour the melted chocolate mixture over the cereal mixture and stir until evenly coated.
  7. Press the mixture firmly into the prepared pan and smooth the top.
  8. Refrigerate for at least 2 hours, until firm.
  9. Let the slice stand at room temperature for 5 minutes.
  10. Lift it from the pan and cut into 16 pieces.

Notes

Press the mixture firmly into the pan so the slices hold together. Store covered in the refrigerator for up to 5 days; freezer-friendly. For a dairy-free version, use dairy-free white chocolate chips.
