Ingredients

For the salmon
  • 1.5 lb salmon fillet skinless, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
For the hot honey glaze
  • 2 tbsp unsalted butter
  • 0.25 cup honey
  • 1 tbsp hot sauce
  • 1 tsp lemon juice

Equipment

  • 1 rimmed 18x13-inch baking sheet

Method

Bake the salmon
  1. Preheat the oven to 425°F.
  2. Line a rimmed 18x13-inch baking sheet with parchment paper.
  3. Pat the salmon dry, then toss it in a medium bowl with the olive oil, paprika, garlic powder, salt, and pepper.
  4. Arrange the salmon pieces in a single layer on the baking sheet.
  5. Bake for 8-10 minutes, until the largest piece reaches 145°F when checked with an instant-read thermometer.
Make the hot honey glaze
  1. In a small saucepan over low heat, melt the butter.
  2. Stir in the honey, hot sauce, and lemon juice until smooth and just warm, about 1-2 minutes; do not boil.
Glaze and serve
  1. Transfer the salmon bites to a serving dish.
  2. Drizzle with all of the glaze, and gently toss to coat.

Notes

For tender salmon, check the largest piece with an instant-read thermometer and stop baking once it reaches 145°F. Refrigerate leftovers in an airtight container for up to 3 days; freezing is suitable for up to 2 months, though the texture may soften. For a dairy-free swap, use plant-based butter.
